I regularly travel to Turkey to see family and friends. One of my favourite things there is the breakfasts.
When I'm back home I've taken to doing a (smaller) version for weekend brunches.
It's really easy to put together, and feels like a fresh and healthy start to the day — making a nice change from bacon sarnies.
The small pile just behind the feta is wild oregano preserved (by an uncle) in a red pepper paste.
